Oatmeal Scones and Cornmeal Biscuits

This week is going to be better than last week.  It is only Tuesday and I’ve already completed last week’s Tuesdays with Dorie recipe and this week’s.  I also have a cool new hair cut.  And the Bruins just killed it.  Plus, there is a long weekend filled with cookouts in my future.  Now if the weather in Massachusetts would only improve…

First, last week’s maple cornmeal biscuits.  I wasn’t going to make them.  I was busy with cupcakes and pots de creme all weekend.  Then I saw how simple this recipe was (one bowl! and all ingredients on hand!), and whipped up a small batch for weekend breakfasts.  I love the cornmeal flavor of the biscuits.  They are a little light on the maple but I supposed you could always drizzle more on top if you’re in to that sort of thing.  I had mine with butter and a strip of bacon smooshed into the middle. 

The oatmeal scones were quickly made Monday evening waiting for it to be late enough to start dinner and settle in for the Bs.  Another easy recipe.  I grated the butter into the mix and it came together quickly.  Golden brown (I forgot about them in the oven) and simple.  Nothing revolutionary, just a good standard scone. I’ll be crumbling the bits into my yogurt this morning.
