One Mini Cream Cheese Pumpkin Pie

I was really feeling a little over baked by the time I got to making this week’s Tuesdays with Dorie recipe. I’ve made and eaten way to much of the sweet stuff in the past few days, which is saying a lot for me. Rather than skip the sour cream pumpkin pie, I opted for a mini version.
I just so happened to have a tiny amount of pie crust in the freezer- odds and ends from another recipe. I rolled it out and fit it into a ramekin. Next, how to reduce the filling ingredients to less than a cup altogether… it ended up being a little mad scientist. I didn’t have sour cream so I used a little cream cheese, some pumpkin (of course), tiny part of some egg yolks from the freezer, few pinches of spices and some egg nog to top it off. Mad scientist I tell you. Stuck it in the oven and ta da. One mini pumpkin pie. The verdict? Eh, okay but kind of bland. This is in now way a reflection on the actual recipe, which sounds pretty freakin good.
Anyone else watching Breaking Bad? We’re in the middle of a mini marathon. The first few episodes were a little too depressing but now I’m getting into it. A little late to the party…
